Chocolate covered Granola Bites Recipe

We love these chocolate covered peanut butter granola bites. They’re so easy to make and no baking required.
Ingredients
- 170g Pure Maple Granola
- 20g almonds, or other nuts
- 1/4 teaspoon cinnamon
- 240g peanut butter
- 60g Pure Maple Syrup, Amber Rich
- 100g vegan chocolate chips
- 2 teaspoons coconut oil
Instructions
- In a large bowl add the granola, nuts and cinnamon and combine.
- Place the peanut butter in a sauce pan and heat over a low heat until it loosens up. Remove from the heat and mix in the maple syrup. Add this to the granola, mix well and make small walnut sized bites. Place them on a baking tray.
- Melt the chocolate in a bowl over a pan of simmering water, stirring regularly. Add the coconut oil and mix well.
- Coat the bites with the melted chocolate and leave them to set.
