Maple Roasted Parsnips Recipe

Roasting parsnips with maple syrup brings out the natural sweetness in this delicious root vegetable. This makes a perfect side dish for a roast dinner.
Ingredients
- 450g parsnips
- 2 tablespoons olive oil
- Salt and pepper
- 3 tablespoons Pure Maple Syrup, Amber Rich
Instructions
- Preheat the oven to 200C/180C fan/gas mark 6.
- Peel the parsnips and cut the ends off. Then halve or quarter them lengthwise, to have all the same size. Place them in a pan of boiling water for 5 minutes.
- Drain the parsnips and place on a baking tray. Drizzle them with olive oil and coat well. Then salt and pepper the parsnips to taste and roast for 25 minutes. Finally drizzle with maple syrup and toss them to give them a good coating before placing back in the oven. Roast for another 10 minutes or until just tender.
