Ingredients
- Crumble Topping:
- 175g plain flour
- 1/2tsp ground cinnamon
- 100g dairy free spread
- 75g demerara sugar
- 60g flaked almonds
- Filling:
- 1kg Granny Smith apples
- 1tbsp dairy free spread
- 1/2tsp ground cinnamon
- Pinch of ground nutmeg
- 75g Pure Maple Syrup, Amber Rich
Instructions
- Preheat the oven to 180C/Fan 160C/Gas Mark 4.
- In a bowl mix together the flour, cinnamon and sugar. Add the dairy free spread and rub in with your fingers until the mixture resembles breadcrumbs. Mix in the almonds and transfer to a baking tray. Bake for 15 minutes, turning over halfway through until lightly toasted.
- Meanwhile prepare the apples; peel, quarter and remove the core. Cut each quarter into thirds. Add the dairy free spread to a shallow pan and place over a medium heat. Mix in the spices with the apples and add this to the pan along with a tablespoon of water. About halfway through add the maple syrup. Cook for about 10 minutes or until tender.
- Place the cooked apples in an oval heatproof dish, 28cm. Top with the toasted crumble and bake for 15 – 20 minutes. Serve with vegan vanilla ice cream and a drizzle of maple.
