Christmas Pudding Recipe

Every year we follow the tradtion to make a Christmas pudding and all the family gather round to stir it and make a wish. This year we replaced all the sugar with our maple syrup and have given it a Canadian twist!
This recipe requires a 0.6L pudding bowl.
Ingredients
- 55g suet
- 25g self raising flour, sifted
- 55g breadcrumbs
- 1/2tsp mixed spice
- 1/4 tsp freshly grated nutmeg
- Pinch of cinnamon
- 100g Pure Maple Syrup, Amber Rich
- 55g sultanas
- 55g raisins
- 137g currants
- 20g candied peel
- 1/2 an apple peeled and cut into small chunks
- Finely grated zest of 1 orange
- 1 beaten egg
- 75 ml Guinness
- 1 tbsp rum
- Butter for greasing
Instructions
- Prepare the pudding mixture the day before you want to steam it. In a large mixing bowl, add the suet, sifted flour, breadcrumbs, and spices. Mix well and then add the dried fruit, apple, and orange zest. In another bowl, mix together the wet ingredients and then add this to the large bowl, mixing thoroughly. Finally, gather the family round to stir the pudding and make a wish. Cover with clingfilm and set aside in a cool spot in the kitchen overnight.
- The following day, grease a 0.6L pudding bowl and fill it with the Christmas pudding mixture. Cover it with 2 sheets of greaseproof paper and foil, tied together with string. Place the bowl in a steamer with water simmering in a saucepan. Steam for 8 hours, remembering to refill with boiling water from the kettle regularly.
- When the pudding is done, allow it to cool before replacing the greaseproof paper and foil. Store in a cool place away from sunlight.
Christmas Day
- On Christmas Day, steam for 2 hours to heat thoroughly.
- Serve with brandy butter or custard and enjoy!
