For a special treat on Valentine’s Day these Red Velvet Pancakes with Maple Cream Cheese Frosting would make the perfect breakfast!
Makes 7 pancakes
Ingredients
- Red Velvet Pancakes
- 150g plain flour
- 15g cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 1 egg
- 60g melted butter
- 1 teaspoon vanilla
- 190ml milk
- 1 1/2 tablespoon Pure Maple Syrup, Amber Rich
- 1 teaspoon vinegar
- Red food dye
- Sunflower oil for frying
- Maple Cream Cheese Frosting
- 160g cream cheese
- 1 heaped tablespoon Pure Maple Butter
- 1 teaspoon vanilla
- Strawberries
- Pink sprinkles
Instructions
- In a large mixing bowl add all the dry ingredients and mix together. Whisk together the egg, butter, vanilla, milk, and maple syrup in another bowl. Add this to the dry ingredients and whisk well; then stir in the vinegar. Next add as much food colouring that is necessary to achieve the desired colour. Set a frying pan on medium heat with some oil and allow to heat up.
- Meanwhile mix together the maple cream cheese frosting ingredients until smooth and set aside.
- Add a large spoon full of batter to the hot pan and when the bubbles form on the upper side of the pancake, flip the pancake and cook the other side.
- Sandwich the pancakes together with the maple cream cheese frosting and decorate with sprinkles and strawberry slices.
