Makes about 10 biscuits.
Ingredients
- 100g butter, softened
- 45g Pure Maple Syrup, Dark Robust
- 135g self raising flour
- 15g cornstarch
- 1 tsp ground ginger
- 5 large pieces of stem ginger, cut in half
Instructions

- In a mixer, beat the butter until soft and light at a medium – high speed.
- Reduce the speed of the mixer to medium and slowly add the maple syrup until combined. Regularly scrape down the sides of the bowl to ensure even mixing.
- Add the dry ingredients apart from the stem ginger and fold in with a spatula.
- Form the dough into equal sized balls, about 10, and using a fork flatten the biscuits.
- Place the stem ginger piece in the centre of the biscuit and bake in the oven for 15 – 20 minutes until pale golden.
- Cool on a wire rack.
