Chocolate Chip Banana Nut Muffin Recipe (Vegan Friendly)
These chocolate chip banana and nut muffins are simple to make and ideal when you have a couple of ripe bananas left in the fruit bowl. They make a great breakfast option or a tasty snack with a coffee. They take only minutes to prepare and you know exactly what goes into them.
Ingredients
- 2 ripe bananas
- 120ml oat milk
- 120ml vegetable oil
- 180g Pure Maple Syrup, Amber Rich
- 2 teaspoons vanilla extract
- 240g plain flour
- 1½ teaspoons baking soda
- Pinch of salt
- 150g vegan friendly chocolate chips
- 150g walnuts
Instructions
- Preheat the oven to 180C, 160C fan, or Gas Mark 4. Line a 12 hole muffin tin.
- Place the bananas in a mixing bowl and mash well. Add all the wet ingredients and whisk until combined.
- Add the dry ingredients to the wet mixture and mix until fully combined. Stir in the chocolate chips and walnuts. Spoon the mixture into the muffin tin.
- Bake on the middle shelf of the oven for 20 minutes, or until a toothpick inserted into the centre comes out clean.
- Allow the muffins to cool on a wire rack for about 10 minutes before removing them from the tin.
