Chocolate Chip Banana Nut Muffin Recipe (Vegan Friendly)

These chocolate chip banana and nut muffins are simple to make and ideal when you have a couple of ripe bananas left in the fruit bowl. They make a great breakfast option or a tasty snack with a coffee. They take only minutes to prepare and you know exactly what goes into them.

Ingredients

  • 2 ripe bananas
  • 120ml oat milk
  • 120ml vegetable oil
  • 180g Pure Maple Syrup, Amber Rich
  • 2 teaspoons vanilla extract
  • 240g plain flour
  • 1½ teaspoons baking soda
  • Pinch of salt
  • 150g vegan friendly chocolate chips
  • 150g walnuts

Instructions

  1. Preheat the oven to 180C, 160C fan, or Gas Mark 4. Line a 12 hole muffin tin.
  2. Place the bananas in a mixing bowl and mash well. Add all the wet ingredients and whisk until combined.
  3. Add the dry ingredients to the wet mixture and mix until fully combined. Stir in the chocolate chips and walnuts. Spoon the mixture into the muffin tin.
  4. Bake on the middle shelf of the oven for 20 minutes, or until a toothpick inserted into the centre comes out clean.
  5. Allow the muffins to cool on a wire rack for about 10 minutes before removing them from the tin.
