Extremely versatile, caramelised onions can be added to a wide range of dishes to enhance their flavour. These include meat dishes like burgers and steaks, but also pastas, pizzas stews, soups and quiches. Rich, sweet and soft, they add deep notes to food. However, infusing them with maple syrup can add further depth to your recipe, creating a more complex flavour profile.

Pure maple syrup and caramelised onions complement each other perfectly, as both contain antioxidants, potassium and naturally occurring sugars that provide sweetness without the need for artificial flavourings or additives.

Not only does maple syrup enhance the natural sweetness of caramelised onions while adding smoky depth, but it is also ideal when chefs are short on time. This is because maple syrup hastens the browning process and deliver a rich, glossy glaze much faster.

Ingredients

  • 3 large yellow onions
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 2 tablespoons of golden delicate maple syrup
  • ½ teaspoon of salt

Instructions

Making maple syrup caramelised onions is a simple and straightforward process, but it does require patience and attention to achieve the best results.

Start by slicing the onions into thin strips of equal size to ensure even cooking. Add the olive oil and butter to a large frying pan and warm them over a medium-low heat. You can now add your onions and salt.

Cook the onions gently for 15 to 20 minutes, or until they become soft. You can now stir in the tablespoons of maple syrup. Using golden delicate maple syrup will keep the flavour light and delicate while maintaining the onions’ golden colour.

Continue cooking for a further 15 to 20 minutes, stirring the onions regularly. When they turn a rich deep golden-brown colour, you’ll know they are ready.
