Maple Cookie Brownie Recipe

A rich chocolate brownie that’s fudgy and gooey with chunks of delicious maple cookies.

Ingredients

  1. Preheat the oven to 180C/160C fan/Gas Mark 4 and line a 20cm baking tin.
  2. Gently melt the butter in a saucepan. Remove from the heat, add the chocolate and stir until fully melted. Set aside to cool slightly.
  3. In a large bowl, whisk the egg yolks with the vanilla until light and fluffy. Slowly add the maple syrup down the side of the bowl while whisking to keep the mixture airy. Add the chocolate mixture down the side and whisk gently to combine without knocking out the air.
  4. In a separate bowl, whisk the egg whites until stiff peaks form.
  5. Sift the flour, cocoa powder and salt into the chocolate mixture and fold in carefully. Fold in two thirds of the broken cookies.
  6. Gently fold in the egg whites. Pour into the lined tin, then press the remaining cookies lightly into the top of the batter.
  7. Bake on the middle shelf for 25 to 30 minutes, keeping the centre gooey. Cool on a wire rack, cut into 16 squares and serve with vanilla ice cream.
