Maple Roasted Parsnips Recipe
Roasting parsnips with maple syrup brings out the natural sweetness in this delicious root vegetable. This makes a perfect side dish for a roast dinner.
Ingredients
- 450g parsnips
- 2 tablespoons olive oil
- Salt and pepper
- 3 tablespoons Pure Maple Syrup, Amber Rich
Instructions
- Preheat the oven to 200C/180C fan/gas mark 6.
- Peel the parsnips and cut the ends off. Halve or quarter them lengthwise so they are a similar size, then place them in a pan of boiling water for 5 minutes.
- Drain the parsnips and place on a baking tray. Drizzle with olive oil and coat well. Season with salt and pepper, then roast for 25 minutes. Drizzle with maple syrup and toss to coat, then return to the oven for another 10 minutes, or until just tender.
