Maple Roasted Potatoes Recipe
An enhanced potato dish for festive feasting, Sunday dinners and special occasions, maple roasted potatoes are an indulgent upgrade on traditional roasties and very easy to make.
Ingredients
- 1 kilogram of potatoes (Maris Piper)
- 100 grams of goose or duck fat, or for vegans and vegetarians, use 100 millilitres of olive oil instead.
- 2 tablespoons of pure Canadian maple syrup. Select golden delicate for a lighter flavour or amber rich for a stronger maple flavour.
- Add sea salt before serving
Instructions
Making maple roasted potatoes is a four-step process which includes, preparing, boiling, roasting and drizzling.
Preparation
Start by preheating your oven to 200°C and put a large sized roasting tin inside on the middle shelf to heat.
Clean the potatoes you want to roast and cut each into four even pieces.
Boiling
Add the quartered potatoes to a large pan with just enough cold water to cover them. Sprinkle some salt in the water, put the lid on and bring the pan to the boil. Now reduce the heat and remove the pan lid to simmer the potatoes uncovered for two minutes, Now, take the pot off the heat and drain the potatoes. For a crunchier outer texture, put them in a colander, cover with the pan lid and gently rough them up.
Roasting
Remove the now-hot roasting tin and add the oil or animal fat. Replace it and heat for a few minutes.
Take the roasting tin back out and carefully place the potatoes into the hot fat and turn them to ensured they are evenly coated. Now spread the potatoes out making sure there is space around each quarter.
Roast the potatoes for 15 minutes, then turn them and roast for a further 10 to 20 minutes until they look crisp and golden. You can test them with a fork to see how they are cooking during the process.
Drizzling
When you have only 10 minutes cooking time to go, remove the roast potatoes and pour the two tablespoons of authentic maple syrup over them. This will create a mouth-watering golden glaze.
Before serving, finish the maple roasted potatoes with a pinch of sea salt to taste.
