These Maple Spided Jack-o’-lantern Cookies are easy to make and fun to decorate! A delicious treat and an entertaining activity for little ones this Halloween. Makes about 20 cookies

Instructions

  1. Beat the sugar and butter until creamy and slowly add the maple syrup beating continuously. With the mixer still running, gradually add the beaten eggs and vanilla until well incorporated.
  2. Sift the dry ingredients over the cookie mixture and gently stir to combine. Place it on a slightly floured surface and knead it a little. Divide the dough into 2 halves and wrap them up with clingfilm before placing them in the fridge to chill for an hour.
  3. Preheat the oven to 175°C/ 155°C fan/Gas Mark 4. Line 2 baking trays with parchment paper.
  4. Take out 1 half of the dough and roll it out to the thickness of a 1 pound coin. Space out the cut cookies well on the tray and bake in the oven for 12 -14 minutes until golden (if the dough has become too warm while cutting out cookies, chill for a few minutes before baking to avoid spreading too much). Completely cool on a wire rack. Repeat until finished.
  5. Meanwhile begin making the icing. Sift the icing into a large bowl and whisk in the maple syrup and gradually add the milk a little at a time until correct consistency is reached.
  6. Place a small amount of icing in a little bowl and mix in the black food colouring for the mouth and nose. For the remaining icing, mix in the orange food colouring. Place into piping bags and when the cookies have completely cooled have fun decorating them!
  7. Apply the orange icing first as an outline and then fill in the space with the colouring. Alternatively you can dip the cookie in a shallow dish with orange icing to cover the entire cookie.
  8. Stick the eyes on and allow to set before making the mouth and nose.
