- 375 grams of plain flour
- 260 grams of unsalted butter
- 125 grams of sugar
- Two round cutters (one slightly smaller than the other)
Filling
- Zest of a lemon
- 600 grams of mincemeat
- 2 satsumas in segments
- 1 finely chopped apple
- 100 millilitres of genuine Canadian maple syrup (use golden delicate, amber rich or dark robust depending on your favourite flavour profile)
Instructions
Maple Syrup Minced Pies is a four-step recipe which involves making the pastry and filling, combining the two and then baking
Preparation
Preheat your oven to 220° and then taking a muffin tray, grease it with some unsalted butter.
Making the pastry
Start by beating one of the large eggs and put to one side.
Next put the butter and plain flour in a bowl and mix them together until you get a crumb consistency. Now add the sugar and the beaten egg, mixing them thoroughly.
Lightly flour your work surface and carefully tip out the contents of the bowl. Keep folding until the pastry forms. When it’s ready, wrap it in cling film and put it in the fridge to chill for at least 10 minutes.
Making the filling
Spoon out the mincemeat into a large bowl and add the lemon zest, apple, satsumas and most importantly, your maple syrup of choice. Now, mix them together.
Combining pastry and filling
Beat your second large egg and put to one side.
Remove your pastry from the fridge and roll it out until it’s three millimetres thick. Now use the large cutter and make 16 bases. You can then place them in the muffin tray.
Put a tablespoon of your mincemeat mixture in each one and brush the edge of every pie with a little bit of beaten egg. You can now use your smaller cutter to cut out 16 circles to create the tops and add them.
For a golden finish, glaze the pies with a little beaten egg and then sprinkle the tops with sugar.
Baking
Place the tray of minced pies in the pre-heated oven and bake them for 20 minutes or until they’re golden brown. Leave them to cool before removing them from the tray. Serve them warm with a generous dollop of clotted cream or soft vanilla gelato and a drizzle of maple syrup.
