Apple Maple Muffins with Crumble Topping Recipe

These apple maple muffins with crumble topping are a great way to start your day, make a tasty snack after school or a healthy option for the lunchbox.

Ingredients

Crumble Topping

  • 15g butter, cold
  • 25g plain flour
  • 15g maple sugar or brown sugar

Instructions

  1. Preheat the oven to 190C/170C fan/Gas Mark 5 and line a 12 hole muffin tin.
  2. Put the chopped dates into a jug and pour boiling water over them to just cover. Leave for 1 minute to soften, then puree. Melt the butter and set both aside to cool.
  3. Beat the eggs until light and fluffy. Add the maple syrup and beat until well combined, then stir in the melted butter.
  4. Sift the dry ingredients into a separate bowl. Add them gradually to the egg mixture, folding gently with a spatula. Fold in the chopped apple, then spoon the mixture evenly into the muffin tin.
  5. Make the crumble topping: cut the cold butter into small pieces, then rub the butter, flour and sugar together with your fingertips until it resembles a coarse crumb.
  6. Sprinkle the topping over the muffins and bake for 25 minutes on the middle shelf. Cool on a wire rack.
