Baked Salmon with Maple Herb Crust Recipe
We love this simple Baked Salmon with Maple Herb Crust recipe. It is a crowd pleaser that is sure to delight the whole family. Light, healthy, and full of flavour, it is perfect for a relaxed dinner or easy entertaining.
Serve with new potatoes, salad or green vegetables and extra lemon wedges.

Ingredients

3 tbsp Pure Maple Syrup, Dark Robust
- 1 lemon
- 2 large handfuls fresh herbs such as parsley, thyme, chives, rosemary, oregano, or a mix
- 3 large handfuls fresh breadcrumbs
- 2 tbsp finely grated parmesan cheese
- 2 tbsp extra virgin olive oil
- 4 large salmon or sea trout fillets
- Black pepper
- Cherry tomatoes on the vine
Instructions
- Preheat the oven to 200°C/180°C fan/Gas Mark 6.
- Line a baking tray with foil and place the salmon fillets on top.
- Zest the lemon into one bowl and squeeze the juice into another small bowl.
- Stir 1 tablespoon of maple syrup and a good grind of black pepper into the lemon juice, then pour over the salmon to marinate while you prepare the topping.
- Add the herbs, breadcrumbs and parmesan to the bowl with the lemon zest. Drizzle in 2 tablespoons of maple syrup and the olive oil, then stir well.
- Pile the crumb topping onto the salmon fillets, pressing it down lightly. Add a few cherry tomatoes to the tray, then bake for 15 minutes or until the salmon is just cooked through.
- Serve with buttery new potatoes, a fresh salad, and extra lemon wedges for squeezing over.
