Serves: 4

Ingredients

  • 3 tbsp Pure Maple Syrup, Dark Robust
  • 1 lemon
  • 2 large handfuls fresh herbs such as parsley, thyme, chives, rosemary, oregano, or a mix
  • 3 large handfuls fresh breadcrumbs
  • 2 tbsp finely grated parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 4 large salmon or sea trout fillets
  • Black pepper
  • Cherry tomatoes on the vine

Instructions

  1. Preheat the oven to 200°C/180°C fan/Gas Mark 6.
  2. Line a baking tray with foil and place the salmon fillets on top.
  3. Zest the lemon into one bowl and squeeze the juice into another small bowl.
  4. Stir 1 tablespoon of maple syrup and a good grind of black pepper into the lemon juice, then pour over the salmon to marinate while you prepare the topping.
  5. Add the herbs, breadcrumbs and parmesan to the bowl with the lemon zest. Drizzle in 2 tablespoons of maple syrup and the olive oil, then stir well.
  6. Pile the crumb topping onto the salmon fillets, pressing it down lightly. Add a few cherry tomatoes to the tray, then bake for 15 minutes or until the salmon is just cooked through.
  7. Serve with buttery new potatoes, a fresh salad, and extra lemon wedges for squeezing over.
