Banana and Blueberry French Toast Sandwich Recipe
This fab banana and blueberry French toast recipe is definitely one you must try.
Originally adapted from a Jamie Oliver recipe.
Makes 3 French toast sandwiches.
Ingredients
- 1 ripe banana
- Handful of blueberries, reserving some for serving
- 2 eggs
- 1 teaspoon vanilla
- 50ml milk
- 6 slices of white bread
- Vegetable oil, for frying
- Pure Maple Syrup, Amber Rich, to serve
Instructions
- In a bowl, mash the banana with some of the blueberries, reserving a few for later.
- In another bowl, beat the eggs with the vanilla and milk.

Dip the slices of bread into the egg mixture. Lay them on a tray.
Spoon one third of the banana and blueberry mash evenly onto a slice of bread for each sandwich,
then top with another slice of soaked bread. -
Lightly oil a non stick frying pan and cook the French toast sandwiches over a medium heat.
Use a spatula to press them down gently.
Fry each side for about 2 minutes until golden. - Serve with yoghurt, fresh blueberries and a generous drizzle of maple syrup.
