Chocolate Covered Granola Bites Recipe
These chocolate covered peanut butter granola bites are incredibly easy to make and require no baking at all. They are perfect as a quick snack, lunchbox treat, or simple dessert.
Ingredients
- 170g Pure Maple Granola
- 20g almonds or other nuts, chopped
- ¼ teaspoon ground cinnamon
- 240g peanut butter
- 60g Pure Maple Syrup, Amber Rich
- 100g vegan chocolate chips
- 2 teaspoons coconut oil
Instructions
- Place the granola, chopped nuts and cinnamon into a large bowl and mix well.
- Gently heat the peanut butter in a saucepan over a low heat until softened. Remove from the heat and stir in the maple syrup.
- Add the peanut butter mixture to the granola and mix until fully combined. Shape into small walnut sized bites and place on a lined tray.
- Melt the chocolate in a bowl over a pan of gently simmering water, stirring regularly. Add the coconut oil and mix until smooth.
- Coat each granola bite in the melted chocolate and leave to set at room temperature or in the fridge.
