Crumpet Recipe
Once you have made homemade crumpets, you will never want to buy supermarket ones again. This recipe is adapted from a Jamie Oliver recipe, with the sugar replaced by maple syrup. It takes a little time, but it is well worth the effort.
Serve the hot toasted crumpets with delicious Pure Maple Butter. It really is the best way to enjoy crumpets.
Ingredients
- 400ml semi skimmed milk, warmed
- 100ml warm water
- 1 tablespoon yeast
- 1 teaspoon Pure Maple Syrup
- 300g strong white flour or plain flour
- 1 teaspoon salt
- ½ teaspoon bicarbonate of soda
- Vegetable oil, for greasing
Instructions
- Warm the milk gently over a low heat and set aside. In a bowl, add the yeast and maple syrup, then pour in the tepid milk and warm water. Whisk well to dissolve and leave in a warm place for about 15 minutes, until frothy.
- Sift the flour, salt, and bicarbonate of soda into a large bowl. Make a well in the centre, add the yeast mixture, and whisk from the centre outwards until fully combined.
- Cover the bowl with a damp tea towel and leave in a warm place for 45 minutes, until bubbles reach the surface.
- Grease four 10cm egg rings with vegetable oil and lightly oil a frying pan. Place the pan over a medium heat.
- Arrange the rings in the pan and spoon about four tablespoons of batter into each ring. Cook for around 5 minutes, until bubbles appear on the surface.
- Once the bubbles burst and leave small holes, carefully remove the rings and flip the crumpets to cook the other side for about 1 minute. Re-grease the rings before cooking the next batch.
