French Toast Recipe
Our French toast recipe made with brioche and topped with maple caramelised bananas is so simple and delicious you will want to have it all the time.
Ingredients
- For French toast
- 3 eggs
- 60ml milk
- 1 teaspoon cinnamon

2 tablespoons Pure Maple Syrup, Amber Rich, plus extra for drizzling
- 1 teaspoon vanilla
- 6 slices brioche, sliced
- Butter for frying
- Icing sugar, for dusting
- For the caramelised bananas
- 2 bananas, sliced
- 2 teaspoons unsalted butter

- Pinch of cinnamon
Instructions
- Place the butter in a non stick frying pan and set the pan over a medium heat. Preheat the oven to 150C, fan 130C, gas mark 2.
- In a bowl, whisk together the ingredients for the French toast. Transfer the egg mixture to a shallow dish and dip the brioche in the mixture, coating both sides.
- Fry the brioche until golden brown, then turn to fry the other side. Once cooked, place on a plate and keep warm in the oven while you fry the remaining slices.
- Wipe the pan clean, then make the caramelised bananas. Add the butter and, once melted, add the maple syrup and a pinch of cinnamon. Let it bubble, then add the banana slices. Cook for 1 1/2 to 2 minutes, turn, and cook the other side. Arrange the bananas on the French toast, dust with icing sugar, drizzle with extra maple syrup, and serve.
