Grilled Peaches with Maple Crumble and Lime Mascarpone Recipe
A simple and delicious summertime dessert of lightly caramelised peaches with a maple crumble topping, served with a tangy and sweet, creamy mascarpone cheese.

Ingredients
- 50g plain flour
- 25g cold butter, cut into small cubes
- 30g oats

3 tbsp Pure Maple Syrup, Dark Robust, plus extra for drizzling
- 4 peaches (or nectarines or plums)
- 4 tbsp mascarpone
- 1 lime
Instructions
- Preheat the oven to 180°C/160°C fan/Gas Mark 4.
- Add the flour and butter to a bowl and rub together lightly between your fingers until the mixture resembles breadcrumbs. Stir in the oats, then add 1 tbsp maple syrup.
- Tip the crumble mixture onto a baking tray lined with foil and bake for 7 to 8 minutes until golden.
- Meanwhile, halve and de-stone the peaches. Melt the butter in a frying pan or griddle pan and cook the peaches for a few minutes until lightly charred, slightly softened and juicy. Transfer to a serving plate.
- Zest the lime into a small bowl, then squeeze in the juice from half the lime. Stir in the mascarpone and 2 tbsp maple syrup.
- Squeeze the juice from the remaining half lime over the cooked peaches. Sprinkle over the crumble mixture and serve with the lime mascarpone on the side, finished with an extra drizzle of maple syrup.
