Maple Banana Bread Recipe

Banana bread is always a winner, but this version is extra special thanks to the rich flavour of pure maple syrup. It is delicious as it is, or you can customise it with blueberries, nuts or chocolate chips.

Ingredients

  • 100g unsalted butter, softened
  • 50g muscovado sugar
  • 100g Pure Maple Syrup, Dark Robust
  • 225g self raising flour
  • 1 teaspoon cinnamon
  • 4 eggs
  • 4 ripe bananas
  • Handful of oats, for sprinkling

Instructions

  1. Preheat the oven to 180C, or 160C fan, and line a 2lb loaf tin.
  2. In a mixer, beat the butter until light and pale. Add the sugar and mix well, then slowly pour in the maple syrup. Scrape down the sides and bottom of the bowl as needed to ensure everything is fully combined.
  3. In one bowl, measure out the dry ingredients, leaving out the oats. In another bowl, whisk the eggs.
  4. Add the eggs and dry ingredients to the butter and maple mixture, alternating between each addition.
  5. Cut one banana lengthways into thirds. Reserve two pieces for decoration. Mash the remaining piece with the other three bananas, then gently fold into the mixture. Pour the batter into the prepared tin.
  6. Arrange the reserved banana slices on top and sprinkle with a few oats.
  7. Bake on the middle shelf of the oven for 50 to 55 minutes, until springy to the touch and a toothpick inserted into the centre comes out clean.
  8. Place on a wire rack and leave to cool in the tin for 10 minutes.
  9. Remove from the tin and allow to cool fully before serving.
