Maple Barbecue Sauce

When exposed to heat, maple syrup caramelises beautifully, adding a rich depth of flavour to this sauce. The result is a mouthwatering glaze that enhances the juiciness of grilled meats and adds a glossy, appetising finish.

Ingredients

  • 180g tomato ketchup
  • 150g Pure Maple Syrup, Dark Robust
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornflour
  • 2 teaspoons smoked paprika
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • Salt, to taste

Instructions

  1. Whisk all the ingredients together in a saucepan and place over a medium heat. Bring to a gentle bubble, then reduce the heat and simmer until thickened, about 10 minutes.
  2. Allow the sauce to cool slightly, then serve as a dip or use as a marinade for meat before cooking.
  3. Store in an airtight container in the refrigerator for up to one week.
