Maple Brownie Recipe

These delicious, gooey maple brownies are a family favourite.

Ingredients

  • 165g unsalted butter
  • 200g semi sweet chocolate chips
  • 3 eggs, separated
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 65g brown sugar
  • 90g Pure Maple Syrup, Dark Robust
  • 80g plain flour
  • 1 tablespoon cocoa powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 180C or 160C fan, gas mark 4. Line a 20cm square tin with parchment paper.
  2. Melt the butter in a saucepan over a medium heat. Remove from the heat, add the chocolate chips, then set aside to cool.
  3. Whisk the five egg yolks with the vanilla until light and fluffy. Slowly whisk in the brown sugar, then the maple syrup, mixing continuously. In a separate bowl, whisk the egg whites until stiff peaks form.
  4. Stir the cooled chocolate mixture until smooth, then add it to the egg yolk mixture, pouring it slowly down the side of the bowl. Whisk until fully combined.
  5. Sift the flour, cocoa powder, and salt over the chocolate mixture, then fold in gently with a spatula until incorporated.
  6. Fold in the whisked egg whites. Pour into the tin and bake for about 25 minutes. The brownies should remain slightly gooey in the middle.
  7. Allow to cool before cutting into squares.
