Maple Cherry Cookie Recipe

A rich and crumbly cookie sweetened with 100 percent pure maple syrup. These maple cherry cookies are simple to make and perfect with a cup of tea.

Ingredients

  • 275g self raising flour

  • 175g Pure Maple Syrup, Amber Rich
  • 225g unsalted butter, softened
  • 2 egg yolks
  • 1/2 teaspoon vanilla
  • 50g desiccated coconut
  • 11 glace cherries, halved
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 190C, Fan 170C, Gas Mark 5. Line two baking trays with greaseproof paper.
  2. In a mixer, combine the flour, maple syrup, butter, egg yolks and vanilla until a dough forms. Refrigerate the dough for 1 hour.
  3. Divide the dough into 22 equal portions, roughly walnut sized. Roll each portion in the desiccated coconut and gently flatten. Place half a glace cherry on top of each cookie.
  4. Bake for 20 minutes until lightly golden. Leave the cookies on the tray for 5 minutes, then transfer to a wire rack to cool completely.
  5. Dust with icing sugar before serving.
