Maple Cherry Cookie Recipe
A rich and crumbly cookie sweetened with 100 percent pure maple syrup. These maple cherry cookies are simple to make and perfect with a cup of tea.
Ingredients
- 275g self raising flour

175g Pure Maple Syrup, Amber Rich
- 225g unsalted butter, softened
- 2 egg yolks
- 1/2 teaspoon vanilla
- 50g desiccated coconut
- 11 glace cherries, halved
- Icing sugar, for dusting
Instructions
- Preheat the oven to 190C, Fan 170C, Gas Mark 5. Line two baking trays with greaseproof paper.
- In a mixer, combine the flour, maple syrup, butter, egg yolks and vanilla until a dough forms. Refrigerate the dough for 1 hour.
- Divide the dough into 22 equal portions, roughly walnut sized. Roll each portion in the desiccated coconut and gently flatten. Place half a glace cherry on top of each cookie.
- Bake for 20 minutes until lightly golden. Leave the cookies on the tray for 5 minutes, then transfer to a wire rack to cool completely.
- Dust with icing sugar before serving.
