Roasted Carrots with Maple Syrup

Looking for a delicious and healthy side dish to add to your dinner tonight?
Try these maple roasted carrots. They are perfect served with a summer barbecue
and just as good alongside a traditional roast dinner.

Ingredients

  • 450g baby carrots
  • Olive oil for roasting
  • A few sprigs of thyme
  • Salt, to taste
  • 2 tablespoons Pure Maple Syrup, Golden Delicate

Instructions

  1. Preheat the oven to 200C, fan 180C, gas mark 6.
    Line a baking tray with parchment paper.
  2. Trim and wash the carrots. There is no need to peel them.
    Dry well and place on the baking tray.
    Drizzle with olive oil, season with salt, and add the thyme.
    Roast for 20 minutes.
  3. Remove from the oven, drizzle over the maple syrup and coat evenly.
    Return to the oven for a further 5 to 10 minutes until tender and lightly caramelised.
