Maple Roasted Rhubarb Recipe
Sweeten rhubarb with maple syrup and roast it in the oven. It makes a delicious and healthy breakfast served with yoghurt, or a lovely treat with Greek yoghurt or ice cream.
Ingredients
- 400g rhubarb
- 90g Pure Maple Syrup, Amber Rich
- Zest and juice of 1 small orange
Instructions
- Preheat the oven to 200C, 180C fan, or Gas Mark 6.
- Wash the rhubarb, chop into small chunks, and place on a baking tray.
- Add the maple syrup, orange zest, and orange juice. Cover the tray with foil and roast in the oven for about 20 minutes, or until the rhubarb is tender.
- Allow to cool slightly, then serve with yoghurt or ice cream. Optionally drizzle with extra maple syrup for a sweeter taste.
