Maple Roasted Rhubarb Recipe

Sweeten rhubarb with maple syrup and roast it in the oven. It makes a delicious and healthy breakfast served with yoghurt, or a lovely treat with Greek yoghurt or ice cream.

Ingredients

Instructions

  1. Preheat the oven to 200C, 180C fan, or Gas Mark 6.
  2. Wash the rhubarb, chop into small chunks, and place on a baking tray.
  3. Add the maple syrup, orange zest, and orange juice. Cover the tray with foil and roast in the oven for about 20 minutes, or until the rhubarb is tender.
  4. Allow to cool slightly, then serve with yoghurt or ice cream. Optionally drizzle with extra maple syrup for a sweeter taste.
