The aroma of flapjacks baking in your kitchen brings back memories of simple childhood treats. Healthy, wholesome and made with delicious natural maple syrup. A lovely treat for any time of day, easy to make and a great way to introduce little ones to home baking.
Ingredients
- 125g unsalted butter
- 100g Pure Maple Syrup, Dark Robust
- 80g brown sugar
- 250g rolled oats
- 50g unsweetened desiccated coconut (optional)
Chocolate drizzle (optional)
- 50g chocolate chips
- 1 teaspoon coconut oil
Method

Preheat the oven to 180C and line a 17cm x 17cm tin with parchment paper. Gently heat the butter in a saucepan and add the maple syrup and sugar. Heat until the butter, maple syrup and sugar are fully incorporated.

In a large bowl add the oats and coconut, then pour the wet ingredients over. Mix well with a wooden spoon.

Tip the mixture into the prepared tin and flatten with the back of a spoon. To compact it, lay another piece of parchment over the top and press down to make it even and flat. - Bake for about 30 minutes until golden and browned around the edges.
- Cool for 5 minutes in the tin, then mark out 12 flapjacks.

This is the hardest bit. Allow to cool completely before cutting into bars.

To make chocolate covered flapjacks, place the chocolate in a microwave safe dish and heat for 20 seconds, then stir. Mix in the melted coconut oil. Drizzle over the flapjacks or spoon on to fully cover, then allow to set.
