Pumpkin French Toast Recipe

Ingredients
- For the pumpkin French toast
- 140g pumpkin puree
- 3 eggs
- 3 tablespoons double cream

2 tablespoons Pure Maple Syrup, Amber Rich, plus extra for serving
- 1 teaspoon vanilla
- 1 teaspoon orange zest
- 1 teaspoon pumpkin pie spice
- 8 slices white bread
- Sunflower oil, for frying
- For the pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon freshly ground nutmeg
- 1/2 teaspoon allspice
Instructions

Mix together all the pumpkin pie spice ingredients in a small bowl.
Store any extra in a sealed jar. - In a shallow dish, whisk together all the French toast ingredients except the bread and oil.

Heat a frying pan over a medium heat and add a little oil.
Dip each slice of bread into the pumpkin mixture, coating both sides well.
Fry for around 2 minutes on each side until lightly golden around the edges.
Keep cooked slices warm in a low oven while you finish the rest. - Serve warm with an extra drizzle of pure maple syrup.
