Pumpkin French Toast Recipe

You will love this pumpkin French toast recipe. It tastes like pumpkin pie for breakfast and makes a quick, comforting treat.

Serves 4.

Ingredients

  • For the pumpkin French toast
  • 140g pumpkin puree
  • 3 eggs
  • 3 tablespoons double cream

  • 2 tablespoons Pure Maple Syrup, Amber Rich, plus extra for serving
  • 1 teaspoon vanilla
  • 1 teaspoon orange zest
  • 1 teaspoon pumpkin pie spice
  • 8 slices white bread
  • Sunflower oil, for frying
  • For the pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon freshly ground nutmeg
  • 1/2 teaspoon allspice

Instructions

  1. Mix together all the pumpkin pie spice ingredients in a small bowl.
    Store any extra in a sealed jar.
  2. In a shallow dish, whisk together all the French toast ingredients except the bread and oil.
  3. Heat a frying pan over a medium heat and add a little oil.
    Dip each slice of bread into the pumpkin mixture, coating both sides well.
    Fry for around 2 minutes on each side until lightly golden around the edges.
    Keep cooked slices warm in a low oven while you finish the rest.
  4. Serve warm with an extra drizzle of pure maple syrup.
