Makes 7 pancakes
Ingredients
- Red velvet pancakes
- 150g plain flour
- 15g cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt
- 1 egg
- 60g butter, melted
- 1 teaspoon vanilla
- 190ml milk
-
1½ tablespoons Pure Maple Syrup, Amber Rich
- 1 teaspoon vinegar
- Red food colouring
- Sunflower oil for frying
- Maple cream cheese frosting
- 160g cream cheese
-
1 heaped tablespoon Pure Maple Butter
- 1 teaspoon vanilla
- Strawberries
- Pink sprinkles
Instructions
- In a large bowl, combine all the dry ingredients. In a separate bowl, whisk together the egg, melted butter, vanilla, milk, and maple syrup. Add the wet ingredients to the dry ingredients and whisk until smooth, then stir in the vinegar. Add enough food colouring to reach your desired shade of red.
- Heat a frying pan over medium heat with a little oil. While the pan heats, mix together all the maple cream cheese frosting ingredients until smooth and set aside.
- Spoon a large ladle of batter into the hot pan. When bubbles form on the surface of the pancake, flip and cook the other side until cooked through.
- Stack or sandwich the pancakes with the maple cream cheese frosting. Decorate with strawberry slices and pink sprinkles, then serve immediately.
