Refined Sugar Free Flapjacks

We made these gorgeous flapjacks using only pure maple syrup as a natural sweetener. As an extra treat, they are finished with a drizzle of salted maple caramel. After many requests for the recipe, we are pleased to share it here.

Ingredients

  • 250g rolled oats
  • 125g unsalted butter
  • 180g pure maple syrup, dark robust

Salted Maple Caramel Sauce (optional)

  • 125ml double cream
  • 25g unsalted butter
  • 250g pure maple syrup, dark robust
  • Salt, to taste

Instructions

  1. Preheat the oven to 180C, or 160C for a fan oven. Line a 17cm x 17cm tin with parchment paper.
  2. Gently heat the butter in a saucepan until melted. Remove from the heat, add the maple syrup and oats, and mix well.
  3. Tip the mixture into the prepared tin and use the back of a spoon to flatten and smooth the surface.
  4. Bake for about 30 minutes until golden brown.
  5. To make the caramel sauce, place the cream, butter and maple syrup into a clean saucepan and bring to the boil.
  6. Reduce the heat and whisk continuously until the sauce thickens, about 10 minutes. Add salt to taste and set aside.
  7. Remove the flapjacks from the oven and allow to cool for 5 minutes, then mark out 12 portions.
  8. Leave to cool completely before cutting into bars and drizzle with the salted maple caramel sauce.
