Roasted Butternut Squash with Chilli Pepper and Maple Syrup Recipe

It is beginning to feel very autumnal and this simple comfort food recipe is perfect for the season. Roasted butternut squash, sweetened with maple syrup and balanced with the heat of chilli, makes an excellent side dish for a hearty stew.

Ingredients

  • 1 butternut squash
  • A few sprigs of thyme
  • ¼ teaspoon ground cinnamon
  • 1 red chilli pepper, deseeded and finely chopped
  • 1½ tablespoons olive oil
  • Salt and pepper, to taste
  • 100g Pure Maple Syrup, Amber Rich

Instructions

  1. Preheat the oven to 200C, or 180C fan, Gas Mark 6.
  2. Halve the butternut squash lengthways and discard the seeds. Place on a baking tray.
  3. Sprinkle with cinnamon, thyme sprigs and chopped chilli, then season with salt and pepper. Drizzle with olive oil.
  4. Roast in the oven for 40 to 45 minutes, until the squash is soft and lightly caramelised.
  5. Remove from the oven, drizzle with maple syrup and serve warm as a side dish.
