Pure Maple Blondies

Ingredients
- 125g pure maple syrup, dark robust
- 165g unsalted butter, melted
- 225g plain flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs, beaten
- 170g white chocolate, chopped
- 100g milk chocolate chips
- 1 teaspoon vanilla extract
Method
- Preheat the oven to 200C and line a 20cm square tin.
- Melt the butter in a large bowl and allow it to cool slightly.
- Sift the flour, baking powder and salt together.
- Add the maple syrup, vanilla extract and beaten eggs to the cooled butter and mix well.
- Gently fold the dry ingredients into the butter and maple mixture, taking care not to overmix.
- Fold through the white chocolate and milk chocolate chips.
- Pour the mixture into the prepared tin and level the top.
- Bake for 20 to 25 minutes, until golden with a slightly soft centre.
- Cool on a wire rack, then cut into squares to serve.
