Salted Matcha Brownie Recipe

These gooey salted matcha brownies have a light earthy flavour and the perfect balance of sweet and salty.

Ingredients

  • 85g unsalted butter
  • 110g white chocolate, finely chopped
  • 2 tablespoons matcha powder, sifted
  • 3 eggs, room temperature
  • 1 teaspoon vanilla

  • 200g Pure Maple Syrup, Dark Robust
  • 110g plain flour, sifted
  • 1/4 teaspoon salt
  • 1/4 teaspoon sea salt flakes, to sprinkle on top

Instructions

  1. Heat the butter in a pan over a high heat to melt. Reduce the heat to low and brown the butter slightly. When you see small brown bits forming, remove from the heat. Add the chopped white chocolate and stir until fully melted. Sift in the matcha powder and mix until smooth, then set aside to cool.
  2. In a large bowl, use a hand held mixer to whisk the eggs, maple syrup and vanilla until light and fluffy.
  3. Slowly pour the cooled chocolate mixture down the side of the bowl and continue whisking until fully incorporated.
  4. Sift in the flour in stages and fold into the mixture. Pour into the prepared tin and spread evenly. Bake for 20 minutes, then remove from the oven. Tap the tin gently to release some air for a denser brownie, then sprinkle with sea salt flakes. Return to the oven for about 10 minutes, taking care not to over bake.
  5. Cool on a wire rack for about 10 minutes, then lift out. Leave to cool completely before cutting into squares.
