S’Mores Cookie Recipe

Our delicious s’mores cookies are a family favourite.

Ingredients

  • 65g unsalted butter, melted
  • 100g brown sugar

  • 100g Pure Maple Syrup, Dark Robust
  • 1 teaspoon vanilla
  • 60ml milk
  • 1 egg
  • 185g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornflour
  • 1/4 teaspoon salt
  • 270g chocolate chips
  • 12 large marshmallows, cut in half

Instructions

  1. Place the brown sugar and maple syrup in a large bowl. Add the melted butter and mix with a hand held mixer.
    Add the vanilla, milk and egg, then mix until well blended.
  2. In a separate bowl, mix together the flour, baking powder, cornflour and salt.
    Add the dry ingredients to the wet mixture and fold until combined, then fold in 170g of the chocolate chips.
    Chill the dough in the fridge for 1 hour.
  3. Preheat the oven to 171C, 151C fan, Gas Mark 4. Line two baking trays.
    Scoop portions of dough onto the trays, leaving space between each cookie.
    Bake for 10 minutes, remove from the oven, press a marshmallow half into the centre of each cookie, then return to the oven for a further 10 minutes.
    Remove and tap the tray carefully on a heatproof surface to flatten the cookies slightly, then cool on a wire rack.
  4. Melt the remaining chocolate chips and drizzle over the cookies to finish.
