Vegan Chocolate Chip Cookie Recipe

These are super delicious vegan chocolate chip cookies, gone in seconds.

Ingredients


  • 100g Pure Maple Syrup, Amber Rich
  • 100g brown sugar
  • 60ml vegan milk of your choice
  • 1 teaspoon vanilla
  • 60g margarine, melted
  • 185g plain flour
  • 1/2 teaspoon bicarbonate of soda
  • Pinch of salt
  • 150g vegan chocolate chips

Instructions

  1. Line 2 large baking trays with parchment paper.
  2. In a large bowl, mix the maple syrup, brown sugar, and vanilla with a mixer until combined.
  3. Add the melted margarine and milk, then mix again.
  4. Fold in the dry ingredients until combined, then stir in the chocolate chips.
  5. Chill for 45 minutes, then preheat the oven to 180C or 160C fan or Gas Mark 4.
  6. Using an ice cream scoop, portion the dough onto the prepared trays, leaving space between each cookie.
    Bake for 10 to 12 minutes, being careful not to overbake.
    Tap the baking tray on a heatproof surface, then leave to cool for 5 minutes.
    Transfer to a wire rack to cool completely.
  7. Sprinkle with a little salt for a sweet and salty finish, optional.
