Vegan Blueberry Pancake Recipe

Only a few days left of Veganuary. Give this recipe a try for lovely fluffy vegan pancakes, served with 100 percent Canadian pure maple syrup or pure maple butter. Completely dairy free.

Makes 4 large pancakes.

Instructions

  1. Add all the dry ingredients to a bowl and stir to combine.
  2. Combine the wet ingredients in a large measuring jug and whisk into the dry mixture. The batter will be quite thick.
  3. Leave the batter to rest while heating oil in a frying pan over a medium heat. When the pan is hot, pour in a large spoonful of batter and scatter several blueberries over the pancake. Cook until bubbles form on the surface, then flip and cook the other side for about 1 minute until golden.
  4. Serve topped with extra blueberries and pure maple syrup.
