Vegan Blueberry Pancake Recipe
Only a few days left of Veganuary. Give this recipe a try for lovely fluffy vegan pancakes, served with 100 percent Canadian pure maple syrup or pure maple butter. Completely dairy free.
Makes 4 large pancakes.
Ingredients
- 180g plain flour
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 250ml oat milk, plus 3 tablespoons
- 2 tablespoons Pure Maple Syrup, Amber Rich, plus extra for serving
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 160g blueberries, plus extra for serving
- Vegetable oil, for frying
Instructions
- Add all the dry ingredients to a bowl and stir to combine.
- Combine the wet ingredients in a large measuring jug and whisk into the dry mixture. The batter will be quite thick.
- Leave the batter to rest while heating oil in a frying pan over a medium heat. When the pan is hot, pour in a large spoonful of batter and scatter several blueberries over the pancake. Cook until bubbles form on the surface, then flip and cook the other side for about 1 minute until golden.
- Serve topped with extra blueberries and pure maple syrup.
