The maple harvest (sugaring season) typically lasts just 4–6 weeks in early spring. Here are some interesting facts about maple harvest: 🍁Sap flows best when nights are below freezing and days are above 0°C. 🍁Maple trees usually need to be around 30–40 years old before they can be tapped. 🍁Trees are not harmed by tapping and can produce sap for decades. 🍁Sap is about 97–98% water and only 2–3% sugar. 🍁Maple syrup is graded by colour and flavour (Golden, Amber, Dark, Very Dark). 🍁Canada produces about 70% of the world’s maple syrup. 🍁Sap must be collected and processed quickly before it spoils. 🍁The season ends when buds begin to form on the trees, which changes the taste of the sap. #puremaplesyrup #puremaple
